Why do I need a commercial kitchen?
In California, food made for sale must be prepared in a Health Department approved facility. Cooking Block is fully certified and compliant — we handle the facility requirements so you can focus on your product.
Is the kitchen exclusively mine during my booking?
Yes — when you reserve a kitchen, that kitchen is exclusively yours for the entire reservation. The walk-in refrigerator and dishwashing room are shared portions of the facility.
What do I need to get started?
Submit a Pre-Assessment Form, tour the facility, complete orientation with the Department of Health, sign the rental agreement, and submit a $500 refundable security deposit. Liability insurance is also required.
Can I bring my own equipment?
Most likely yes — we just need to confirm your equipment meets DOH requirements and that we have adequate space. Email us with the specs and we'll let you know quickly.
Is there storage available?
Yes. Every client receives two metro rack shelves of complimentary dry storage. Additional dry storage and permanent cold storage ($75–150/mo) are available.
Can you serve as a commissary for my food truck?
We're not equipped as a full commissary for mobile units, but you can use our kitchens to store and prepare food for sale through a mobile unit.
